Most of the tea that we drink comes from one of five places: China, India, Sri Lanka, Japan, or Taiwan. Let's learn a little more about each and the tea that they bring.
China, though it produces a very small amount of the world's tea, produces the largest portion of the world's specialty teas. Sixty percent of the tea that is taken out of China is green tea, which is a very large amount of an unusual tea.
India produces 1/3 of the world's tea but only one half of that is exported out of the country. The reason that only half of that is exported is of India's heavy tea drinking population. Much of India's tea is black tea.
Sri Lanka was known primarily for its coffee until a disease took out the crops and farmers were forced to try another crop. They took on a tea crop and by 1875 all the coffee was gone and tea cultivation took over. Most teas in Sri Lanka are also black teas.
Japan is also a great nation of tea drinkers and producers. Most of the tea that they produce is green tea, and they like to keep much of their produce at home.
Taiwan also likes to keep the vast majority of its teas at home but will export some when necessary. It does export green teas, oolong and various other high quality teas. Teas from Taiwan are among some of the most expensive that you can purchase. I hope your Braun water kettle is up for the challenge, because we have a lot of brewing to do.
